1 cup gram flour (besan)

1 tsp red chilli powder
½ tsp carom seeds (ajwain)
Salt to taste
Water as required
Oil for deep frying
Wooden skewers

For Serving:

Tomato ketchup
Hot masala chai

I have prepared spring onion fritters. I have use green part ,just cut after white part in that way that greens stay together, then set them in skewer , 3 in each skewer, then dipped in gram flour besan anddeep fry it . Method:

Trim the spring onions, keeping only a small portion after the white bulb so that all the green leaves remain attached.

Arrange 3 spring onions together and insert a wooden skewer through the white end to hold them firmly.

Prepare a thick batter by mixing besan, rice flour, turmeric, red chilli powder, ajwain, salt, and water.

Dip each spring onion skewer evenly into the batter.

Heat oil and deep fry until golden brown and crispy.

Drain on tissue paper.

Serve immediately with ketchup and a steaming cup of chai.

Tips:

Keep the batter slightly thick so it coats the onions well.

Rice flour gives an extra crispy texture.

Fry on medium heat for even cooking.

Best enjoyed immediately after frying.
