Ingredients:

For the Pineapple:

1½ cups fresh pineapple, chopped
2–3 tbsp sugar
½ cup water

For the Raita:

2 cups fresh thick curd, whisked
½ tsp black salt
1 tsp roasted cumin powder
¼ tsp red chilli powder
1–2 tbsp finely chopped fresh coriander
1–2 tbsp finely chopped fresh mint leaves
½ tsp red chilli flakes, or to taste

Method:

Add fresh pineapple slices, sugar and water to a saucepan.

Cook over medium heat until the pineapple becomes slightly soft and the sugar water reduces. Do not overcook; the pineapple should retain some texture.

Allow the cooked pineapple to cool completely, then chop it into smaller pieces.

Whisk the fresh curd until smooth and creamy.

Add black salt, roasted cumin powder and red chilli powder. Mix well.

Add the cooled cooked pineapple, chopped coriander and mint leaves.

Gently mix everything together.

Finish with red chilli flakes and chill before serving.

Use a ripe, juicy fresh pineapple for the best flavour.
Let the pineapple cool completely before adding it to the curd.
Adjust the sugar according to the natural sweetness of your pineapple.
For a smoother raita, whisk the curd well before adding the other ingredients.
