Customisable: Adjust the spice proportions to suit your family’s taste.
Versatile: Perfect for everyday meals as well as special festive recipes.
Budget-friendly: Make a batch at home using spices already available in your kitchen.

Ingredients:
200 gram Cumin seeds (jeera)
60 grams Coriander seeds (dhania)
40 grams Black peppercorns
50 grams Green cardamom
20 grams Cinnamon sticks
20 grams Cloves (laung)
20 grams Mace (javitri)
2 pieces Nutmeg (jaiphal)
15 grams Bay leaf (tej patta)
Method:
Heat a heavy-bottomed pan on low flame. Add cumin seeds, coriander seeds, black peppercorns, cloves and mace. Dry roast, stirring continuously, until the spices become fragrant. Take care not to burn them, as this can make the masala bitter.
Add the bay leaf, cinnamon sticks and cardamom. Continue roasting on low flame for a little while, stirring so the spices heat evenly and release their wonderful aroma.
Turn off the flame and transfer the roasted spices to a plate. Let them cool completely before grinding. This helps preserve their aroma and prevents condensation from forming in the storage jar.
Transfer the cooled spices to a grinder. Add nutmeg and grind everything into a fine powder.
Pass the ground masala through a fine sieve for a smooth, uniform texture. Grind any coarse particles again if needed. Transfer the finished Garam Masala to a clean, completely dry, airtight jar.
Your fragrant homemade Garam Masala is ready to add warmth and flavour to your favourite Indian dishes!
➡️ Tips for the Perfect Garam Masala:
Always roast the spices on a low flame to prevent burning.
Stir continuously for even roasting.
Add the spices in stages, as you did, to help them roast evenly.
Allow the spices to cool completely before grinding.
Add nutmeg during grinding rather than roasting it with the other spices.
Use fresh, good-quality whole spices for the best flavour.
Sieve the powder to achieve a fine texture.
Make smaller batches if you use Garam Masala occasionally, so it stays fragrant.
➡️How to Use Garam Masala in Indian Cooking
Garam Masala is a versatile finishing spice that enhances the aroma and flavour of many Indian dishes.
Sabzis: Add to paneer curries, aloo sabzi, mixed vegetables and seasonal vegetable preparations.
Dal and legumes: Use a pinch in dal tadka, chole, rajma and other bean curries.
Rice dishes: Enhance pulao, biryani and masala rice.
Snacks: Add to cutlets, tikkis, pakoras and savoury fillings.
Gravies: Stir into paneer masala, kofta curry and other rich Indian gravies.
Soups: A tiny pinch can add warmth to Indian-style vegetable soups.
Pro tip: Add Garam Masala towards the end of cooking or during the final few minutes. This helps retain its beautiful aroma. Start with a small quantity and adjust to taste.
➡️Storage Instructions
Store homemade Garam Masala in a clean, dry, airtight glass jar, away from direct sunlight, heat and moisture.
Always use a dry spoon to take out the powder. For the best flavour and aroma, try to use it within 2–3 months. It may remain usable longer if stored properly, but its fragrance gradually fades over time.
➡️Nutrition Information:
Garam Masala is generally used in small quantities, so its contribution to the overall calories of a dish is minimal. It contains a blend of spices that naturally provide aromatic compounds and small amounts of plant-derived nutrients. Cumin and coriander contribute distinctive flavours, while black pepper, cloves, cinnamon and cardamom add warmth and complexity. Nutmeg and mace provide their characteristic fragrance.
Although these spices are commonly associated with traditional wellness practices, Garam Masala should primarily be enjoyed as a flavouring ingredient rather than considered a treatment for any health condition. Nutritional values per serving will depend on the proportions of spices used.
