➡️Tips for Perfect Pakodas
Squeeze excess moisture from the grated papaya only if it is very watery.
Rice flour gives extra crispiness—don’t skip it.
Freshly crushed black pepper and coriander seeds add a wonderful texture and aroma.
Fry on medium heat for evenly cooked, crispy fritters.
Avoid overcrowding the pan while frying.
➡️Variations:
Add finely chopped spinach or methi leaves.
Mix in grated carrot for extra color.
Sprinkle chaat masala before serving.
Air-fry or shallow-fry for a lighter version (the texture will be slightly different).
➡️Storage:
These fritters taste best fresh and hot. If you have leftovers, refrigerate them for up to 1 day and reheat in an air fryer or oven to restore crispiness.
➡️Frequently Asked Questions
Can I make these without onion and garlic?
Yes. Simply omit them and increase the ginger, green chillies, and coriander for a delicious no onion-no garlic version.
Can I prepare the mixture in advance?
It’s best to prepare it just before frying, as the vegetables release moisture over time.
Can I use another flour instead of rice flour?
Yes. Corn flour or fine semolina can be used, but rice flour gives the crispiest texture.
➡️Recipe Notes:
Adjust the spice level according to your preference.
Fresh coriander adds freshness, so use it generously.
Freshly pounded spices make a noticeable difference in flavour.
The consistency of the batter should be thick enough to hold its shape while frying.
