Ingredients:

½ cup Proso millet
1 medium potato, boiled and mashed
1 tsp green chilli paste
1 tsp roasted cumin powder
Salt to taste
2-3 tbsp bread crumbs (optional, if needed for binding)
Oil or ghee for greasing the appe pan

For the Healthy Yogurt Dip:
1 cup hung curd
½ cup fresh paneer
2 tbsp makhana powder
2 tbsp beetroot puree
Salt to taste
Freshly ground black pepper to taste

Method:

Prepare Falafel:

Wash the proso millet thoroughly.

Soak it overnight or for at least 8 hours.

Pressure cook the soaked millet until soft.

Allow it to cool completely.

In a mixing bowl, combine,Cooked proso millet,Boiled mashed potato,Green chilli paste,
Roasted cumin powder and Salt.

Mix everything well.

If the mixture feels too soft, add bread crumbs gradually for better binding.

Shape into small equal-sized balls.

Heat an appe pan and lightly grease each cavity.

Place the prepared millet balls into the cavities.

Cook on medium heat until golden brown.

Turn gently and cook the other side until crisp and evenly browned.

Remove and keep warm.

Prepare the Healthy Yogurt Dip:

Add hung curd, paneer, makhana powder, beetroot puree, salt, and black pepper to a blender.

Blend until smooth and creamy.

Chill for 15–20 minutes before serving for the best flavor.
