This easy Indian sweet is a wonderful example of leftover ka makeover—transforming cooked rice into something completely new and delicious. It is economical, requires minimal ingredients, and is a beautiful reminder that every bit of food deserves to be valued and enjoyed rather than wasted.
The rice is cooked with milk and sugar until thick and creamy, then flavoured with saffron and cardamom and enriched with almonds. Once chilled and set, it can be cut into beautiful pieces and served as a homemade sweet.

Ingredients:
2 cups leftover cooked rice
1½ cups milk, or as required
¾ cup sugar, adjust to taste
1–2 tbsp ghee
8–10 saffron strands
½ tsp cardamom powder
2–3 tbsp almond flakes
Additional nuts of your choice, optional
The quantity of milk may vary depending on how moist your leftover rice is.
Method:
In a mixer jar, combine leftover cooked rice, milk and sugar. Blend until smooth or slightly coarse, according to the texture you prefer.
Heat ghee in a heavy-bottomed pan. Add the prepared rice-milk mixture.
Cook on medium flame, stirring frequently to prevent the mixture from sticking to the bottom.
Continue cooking until the mixture gradually thickens and loses its excess moisture.
Add saffron strands, cardamom powder and almond flakes. You can also add chopped cashews, pistachios or other dry fruits of your choice.
Mix well and continue cooking.
Cook until the mixture becomes thick like a soft mass and starts leaving the sides of the pan. This is the right stage for setting the barfi.
Grease a plate or tray with a little ghee. Transfer the hot mixture into it and spread evenly.
Let it come to room temperature, then refrigerate for a few hours until completely set.
Once firm, cut into your desired shape—squares, diamonds or rectangles.
Garnish with a few extra almond flakes or pistachios, if desired.

Tips & Notes:
Use cold leftover rice for this recipe; refrigerated rice works particularly well.
Avoid adding too much milk initially. You can always add more if required.
Cook patiently on medium flame and stir frequently as the mixture thickens.
The mixture should be thick enough to leave the sides of the pan before transferring it to the greased plate.
Adjust sugar according to your taste.
Almond flakes give a lovely texture, but you can use pistachios, cashews or a combination of nuts.
Don’t cut the barfi while warm, as it needs time to firm up.
