RAJKOT SPECIAL GREEN CHUTNEY

Rajkot Famous Green Chutney is a traditional Gujarati condiment that’s loved for its fiery taste, creamy texture, and long shelf life. Unlike regular green chutneys, this version contains no coriander or mint. Fresh green chillies are blended with peanuts, lemon juice, turmeric, asafoetida, and salt to create a thick paste without adding water. Store it in the freezer and simply dilute a small portion whenever needed. It pairs perfectly with fafda, gathiya, bhajiya, samosa, sandwiches, thepla, khakhra, and almost every Gujarati snack.

Ingredients:

100 g spicy green chillies

½ cup roasted peanuts

2 tbsp lemon juice

1 tsp turmeric powder

A pinch of asafoetida (hing)

Salt to taste

Method:

Wash and completely dry the green chillies. Grind peanuts and keep aside.

Add green chillies, lemon juice, turmeric, hing, and salt to a mixer jar.

Grind into a thick, coarse paste without adding any water.

Then add peanut powder and grind again.

Transfer to a clean, dry, airtight container.
Store in the freezer for longer shelf life.

Whenever required, take out a small portion and dilute it with a little water to achieve your preferred consistency before serving.

Dilute only the quantity you need, keeping the remaining chutney thick for better preservation.

Serving Suggestions:

Enjoy it with fafda, gathiya, bhajiya, samosa, kachori, thepla, khakhra, sandwiches, dabeli, vada pav, or as a spicy spread for wraps and rolls.
