Persimmon Shrikhand

Persimmon Shrikhand is a delightful fusion dessert that combines the creamy richness of traditional Shrikhand with the naturally sweet and velvety pulp of Persimmon. This fruity twist brings a subtle honey-like sweetness and beautiful golden color to the classic yogurt dessert. Made with homemade hung curd, fragrant cardamom, and natural sweetener, this shrikhand is light, refreshing, and perfect as a festive or seasonal treat. Garnished with crunchy pistachios, it balances creamy texture with nutty flavor in every spoonful.

Ingredients:
1 cup hung curd (thick yogurt)
½ cup persimmon puree
3–4 tbsp sweetener or sugar (adjust to taste)
¼ tsp cardamom powder
1 tbsp chopped pistachios (for garnish)

Method:

Take fresh curd and place it in a muslin cloth.

Hang it for 4–5 hours (or overnight in the refrigerator) to remove excess whey and obtain thick hung curd.

Peel a ripe persimmon and blend the pulp into a smooth puree.

In a bowl, whisk the hung curd until smooth and creamy.

Add persimmon puree, sweetener, and cardamom powder.

Mix well until the mixture becomes silky and evenly combined.

Refrigerate for 30–60 minutes for the best flavor and texture.

Transfer to serving bowls and garnish with chopped pistachios.
