THAI MANGO SALAD

This Thai Mango Salad is a refreshing mix of sweet, spicy, tangy, and crunchy flavors in every bite. Juicy ripe mangoes are paired with crisp cucumber, colorful bell peppers, onions, fresh herbs, and roasted peanuts, all tossed in a bold homemade dressing made with chilli oil, soy sauce, lemon juice, and aromatic spices. Ingredients:

For the Dressing:
1 tbsp chilli oil
1 tbsp soy sauce
1½ tbsp lemon juice
½ tsp red chilli powder
½ tsp roasted cumin powder
Salt to taste

For the Salad:
2 ripe mangoes (cut into juliennes)
1 cucumber (cut into juliennes)
½ red bell pepper (juliennes)
1 onion (thinly sliced)
1–2 green chillies (chopped)
2 tbsp chopped coriander leaves
2 tbsp chopped mint leaves
3 tbsp roasted peanuts

Method:

In a small bowl, mix chilli oil, soy sauce, lemon juice, red chilli powder, roasted cumin powder, and salt. Whisk well to prepare the dressing.
In a large mixing bowl, add ripe mangoes, cucumber, red bell pepper, onion slices, chopped green chillies, coriander, and mint leaves.
Pour the prepared dressing over the salad and toss gently until everything is well coated.
Top with roasted peanuts for crunch.
Serve immediately chilled for the best fresh and vibrant taste.
