KANDA POHA

Kanda Poha is a delicious and satisfying breakfast of Maharashtrian cuisine. This breakfast delicacy is also a popular street food. Kanda Poha or Kand Pohe is quickly prepared from Poha a.k.a. Beaten rice or flattened rice. It is popular across India and similar to Gujarat’s Bataka Poha & Indori Poha. The key ingredients of Poha are available in every Indian household pantry. Although every household has its own recipe for Poha. Kanda Batata Poha is popular as well. Apart from breakfast, this easy and quick dish is a good option for a kid’s tiffin box and evening snack.

Serves: 2

INGREDIENTS:
2 cups thick poha
1 tbsp sugar
1 tbsp finely chopped coriander
Salt to taste
2 tbsp oil
2 tbsp peanuts
1 tsp cumin seeds
1 tsp mustard seeds
Pinch of hing/ asafoetida
1 sprig curry leaves
1 finely chopped onion
2 green chillies chopped
¼ tsp turmeric powder
1 tbsp lemon juice
Salt to taste

METHOD:
1. Wash and rinse Poha and transfer it in a colander to drain the water off properly.
2. Add sugar, salt, and half of coriander in Poha and mix gently. Keep aside.
3. In a broad pan, add oil and turn on the heat. Add the peanuts once the oil is hot and fry them and transfer them in a plate.
4. In the same oil, add mustard seeds and cumin seeds. Once they splutter, add asafoetida green chillies and curry leaves. Saute for a few seconds, then add onions and saute.
5. Now add salt and turmeric and saute fir few seconds.
6. Further add Poha and peanuts, mix gently and properly. Also add lemon juice.
7. Let it simmer for 2-3 mins and then tur off the heat.
8. Garnish with coriander. Serve hot with some namkeen or sev.

NOTE:
1. Use thick Poha only.
2. You can mix turmeric in Poha.
