CUCUMBER RAITA

Cucumber Raita is a simple, refreshing Indian side dish made with creamy curd and crisp grated cucumber, delicately seasoned with everyday spices. This cooling accompaniment perfectly balances spicy meals and adds a soothing touch to your plate. Light, hydrating, and packed with flavor, this raita is a must-have during warm weather or alongside rich dishes like biryani, pulao, or parathas.

Ingredients:
1 cup fresh curd (yogurt)
1 medium cucumber, grated
Salt to taste
½ tsp black pepper powder
½ tsp roasted cumin powder
2 green chillies, finely chopped
2 tbsp fresh coriander leaves, finely chopped
A pinch of red chilli powder (for garnish)
A pinch of roasted cumin powder (for garnish)
Method:
In a mixing bowl, whisk the fresh curd until smooth and creamy.
Add salt, black pepper powder, and roasted cumin powder. Mix well to combine the flavors evenly.
Add vegetables and herbs
Add grated cucumber, chopped green chillies, and fresh coriander leaves.
Mix gently.
Stir everything together until well combined. Adjust salt if needed.
Garnish and serve
Transfer to a serving bowl. Sprinkle a pinch of red chilli powder and roasted cumin powder on top for an extra flavor boost.
Chill (optional)
Refrigerate for 10–15 minutes before serving for a more refreshing taste.
Tips & Variations:
Squeeze out excess water from cucumber if you prefer a thicker raita.
Add a pinch of chaat masala for a tangy twist.
You can also include grated carrot or finely chopped onion for variation.
Use chilled curd for an instantly cooling effect.
