MORINGA LEAVES FRITTERS

Moringa oleifera is a fast growing and drought resistant tree which is commonly known as the Drumstick tree. India is the largest producer of drumstick/moringa, it is also cultivated in Central America, South America, Africa and South Asia.
Moringa leaves, drumsticks and flowers are used in cooking as well as medicinal use. Every part of Moringa tree has great health benefits. Moringa leaves are rich in various nutrients like protein, vitamin B6, vitamin C and iron. It also contains healthy antioxidants.
Monsoon is here and I have prepared fritters using moringa leaves.

Preparation time : 5 minutes
Cooking time : 10 minutes
Serves: 2 persons

Ingredients:
1/2 cup gram flour
1/2 cup rice flour
1/2 cup finely chopped moringa leaves
1 tbsp chilli ginger paste
1 tsp carom seeds
1/2 tsp turmeric powder
Pinch of asafoetida
1/4 tsp cooking soda
Salt to taste
Oil for frying

Method:

  1. In a mixing bowl add all ingredients except cooking soda. Prepare lumpfree thick batter by adding water.
  2. Add cooking soda in batter just before making fritters. Add one tsp hot oil and mix it well.
  3. In hot oil, drop small fritters from batter and deep fry them from all sides on a medium flame. Transfer them on tissue lined plate.
  4. Serve hot with ketchup.
