PANEER CHEESE GHOTALA

Paneer Cheese Ghotala is a rich, spicy, and ultra-creamy street-style dish inspired by the famous Gujarati “ghotala” concept(Surat Special)—where everything is mashed, mixed, and cooked into a luscious, flavorful blend. Loaded with crumbled paneer, gooey melted cheese, and aromatic spices, this dish is comfort food at its best. It pairs perfectly with buttered pav or toasted bread and makes for a quick yet indulgent meal that feels straight out of a street food cart.

Ingredients:
1- 1/2 cup grated paneer
1/2 cup grated cheese
2 tbsp butter
1 tbsp oil
2 finely chopped onion
1 tbsp ginger-garlic paste
2 finely chopped tomatoes
1 finely chopped capsicum
2 tbsp finely chopped coriander
1 tbsp kasuri methi (dried fenugreek leaves)
1 tsp cumin coriander powder
½ tsp turmeric powder
1 tsp red chilli powder
1 tbsp pav bhaji masala
1 tsp chaat masala
Salt to taste
Method:
- Heat butter and oil in a pan. Add chopped onions and sauté until soft and slightly golden.Add ginger-garlic paste and sauté for a minute until fragrant.
- Add capsicum,tomatoes & salt. Cook until the oil starts separating.
- Add all the dry spices, mix well and cook for a minute.
- Add little water, paneer, some coriander and mix well. Slightly mash it while cooking to get that “ghotala” texture.
- Add grated cheese and mix until it melts completely into the mixture.
- Cover & cook some time. Finally add kasuri methi and coriander. Turn off the heat.
- Serve hot with buns, bread or paratha.
