MALPUA WAFFLES

Malpua Waffles are a creative fusion twist on the traditional Indian sweet Malpua. These waffles are made with wholesome wheat flour, semolina, curd, and milk powder — infused with the rich aroma of cardamom. Instead of deep frying, the batter is cooked in a waffle maker to get a crisp yet soft texture. Served with saffron sugar syrup and creamy rabdi, this dessert brings together Indian flavors and modern presentation beautifully. Perfect for festive treats or indulgent brunches!

Ingredients:
For Waffle Batter:
½ cup wheat flour
2 tbsp semolina (sooji)
1 tbsp milk powder
¼ cup curd
¼–½ cup milk (as required for pouring consistency)
¼ tsp cardamom powder
Pinch of baking soda (optional, for softness)
For Saffron Sugar Syrup:
¼ cup sugar
2 tbsp water
Few saffron strands
¼ tsp cardamom powder
For Serving:
¼ cup rabdi (chilled or slightly warm)
Chopped nuts (pistachios, almonds) for garnish
Method:
In a bowl, whisk together wheat flour, semolina, milk powder, cardamom powder, and curd. Gradually add milk to form a smooth, thick pouring batter. Rest for 10–15 minutes.
Preheat the waffle maker and lightly grease it with ghee or butter. Pour the batter evenly and cook until golden brown and crisp.
In a small pan, combine sugar, water, and saffron strands. Boil for 2–3 minutes until slightly sticky. Add cardamom powder and let it cool slightly.
Place the warm waffle on a plate, drizzle saffron sugar syrup generously, and top with creamy rabdi. Garnish with nuts and serve immediately.
