CHUTNEY PAKODI

Many times, something or the other is left over in our kitchen after a meal. Instead of throwing it away, we should try to use it creatively. When we prepare South Indian food, sometimes some chutney or sambar is left over. We usually use the leftover sambar the next day. But what do you do when chutney is left? When I have leftover chutney, I make delicious crispy fritters out of it.

Preparation time: 5 minutes
Cooking time: 10 minutes
Serves: 2 persons

Ingredients:

1 cup coconut chutney made with chana dal
2 tbsp rice flour
2 tbsp semolina (sooji)
2 tbsp finely chopped coriander leaves
1 tsp finely chopped curry leaves
2 finely chopped green chillies
Salt to taste
Oil for frying

Method:

1. Mix all ingredients into the chutney to prepare a thick batter. Do not add water. Keep the consistency thick.

2. Heat oil and drop small portions into the oil. Fry on medium heat until crispy.

3. Remove and place on a plate lined with kitchen towel.

4. Serve hot with tomato ketchup.
