SEMOLINA STEAMED CAKE

Semolina Steamed Cake has taken social media by storm with its unique combination of semolina, jaggery, and coconut. What’s more? It’s eggless, single-serve, and can be prepared quickly. Lightly sweetened with jaggery and fluffy like idlis, this cake has become a viral sensation.

Makes: 3 steamed cakes
Ingredients:
- 1/4 cup semolina
- 1/4 cup rice flour
- 3/4 cup milk
- 1 teaspoon ghee
- Pinch of salt
- 1 tablespoon milk powder
- 1/4 teaspoon fruit salt
For middle layer:
1 tablespoon jaggery powder
1 tablespoon finely grated fresh coconut For sprinkle:
1 tablespoon jaggery powder
Method:
- In a mixing bowl, combine semolina and rice flour. Add salt, ghee, and milk powder. Mix well.
- Add milk and mix until smooth.
- Add fruit salt, mix, and cover. Let it rest for 10 minutes.
- While the batter is resting, mix coconut and jaggery powder in a separate bowl. Grease three small bowls and keep them ready. Add water to a steamer and turn on the heat.
- Pour a little batter into each of the three molds.
- Sprinkle the jaggery-coconut mixture and cover it with the remaining batter.
- Place the molds into the steamer, cover, and steam cook for 12-15 minutes.
- Once cooked, remove from the steamer and let cool slightly. Unmold and sprinkle with jaggery powder.
- Serve warm and enjoy!
