AMARANTH PEANUT BUTTER CHOCOLATE BARS

As we know Amaranth seeds are known for its high protein content and peanut butter is one of the protein rich non Dairy butter. Dark chocolate is not only delicious treat but it offers several health benefits and rich nutrition profile. It is great source of antioxidants along with minerals. Though it Contain sugar and high calories so need to enjoy moderately.

Preparation Time: 10 minutes
Setting Time: 20 minutes
Serves: 4 persons
Ingredients:
– 1/2 cup peanut butter
– 1/2 cup popped amaranth seeds
– 1/4 cup rice crispies
– 1/4 tsp vanilla essence
– 100 grams dark chocolate
– Sprinklers of your choice (optional)
Method:
1. In a mixing bowl, combine peanut butter, popped amaranth seeds, rice crispies, and vanilla essence. Mix well.
2. Press the mixture into a mould of your choice. Refrigerate for a few minutes to set.
3. Melt the dark chocolate in the microwave or using the double boiling method.
4. Pour the melted chocolate over the set peanut butter mixture.
5. Top with sprinklers of your choice (if using).
6. Refrigerate until the chocolate sets. Cut into pieces and enjoy.
Notes:
1. You can set the mixture in individual small moulds.
2. If using a non-silicone mould, grease and line it with parchment paper
