SPICY MASALA MACARONI

Macaroni is a pasta shaped like narrow tubes, made with durum wheat. Macaroni is commonly cut in short length and usually curved and they are referred to as ‘ elbow macaroni’ . The most popular pasta dish using macaroni is ” mac n cheese”. I have prepared Spicy Masala Macaroni. This Indian style pasta is prepared with lots of spices and veggies.

Preparation time: 15 minutes
Cook time: 20minutes
Serves: 4 persons

Ingredients:
3 cup cooked elbow macaroni
1 onion chopped in petals
1/4 cup zucchini dices
1/4 cup capsicum dices
1/4 cup shredded red cabbage
1 tbsp finely chopped garlic
2 onions finely chopped
1/2 cup tomato puree
2 tbsp tomato ketchup
1 tbsp chilli flakes
1 tbsp kashmiri red chilli powder
1 tbsp pizza seasoning
1 tsp black pepper powder
1 tbsp oil
2 tbsp butter
1/4 cup pasta water
Salt to taste

Method:

  1. Heat oil in a pan and stir fry onions, zucchini, capsicum and red cabbage. Add salt and pepper. Keep aside.
  2. Now heat butter in a pan and sauté garlic and onion.
  3. Then add all the dry spices and sauté for a while.
  4. Add tomato puree, tomato ketchup and salt . Cook for 3-4 minutes.
  5. It’s time to add macaroni, stir fried veggies and mix well.
  6. Add 1/4 cup pasta water and cook for a while . Then turn off the heat.
  7. Serve hot.
