(CUSTARD APPLE BASUNDI )

Basundi is an Indian milk based sweet dish prepared by thickening milk. Basundi is more popular in Gujarat, Maharashtra, Andhara pradesh, Telangana, Tamilnadu and Karnataka. It is very similar to North Indian Rabdi. Sitaphal Basundi is delicious fruity version of plain Basundi.

Preparation time: 15 minutes
Cooking time: 30 minutes
Serves: 2 persons

Ingredients:
1 liter milk
1 cup custard apple (deseeded)
2 tbsp sugar
1 tbsp almond slivers
1 tbsp pistachio slivers
1 tsp cardamom powder

Method:

  1. Add milk in a thick bottom pan and turn on the flame on medium .
  2. After one boil, turn the flame to slow and stir well , so that layer of cream breaks up and mixes well into the milk. Let it simmer till it turns thick and reduce the quantity almost to half. Keep stirring occasionally to avoid sticking milk at the bottom and forming the layer of cream.
  3. Then add sugar, cardamom powder and cook for five more minutes.
  4. Then turn off the heat and let it cool. Once cool, add the custard apple pulp, mix well and keep in the refrigerator to chill.
  5. Garnish with almond, pistachio slivers and serve chilled.
