QUINOA SALAD

Quinoa is a Pseudocereal grain crop grown for it’s edible seeds. These seeds are what we called Quinoa pronounced as Keenwah. It’s usually grouped with cereal grains like oats, barley but Quinoa actually is pseudocereal grain, they are seeds that cooked and eaten similarly to grains. Buckwheat and Amaranth is also pseudocereal grains. The major production and cultivation of Quinoa is in Peru, Bolivia and Ecuador.
These tiny seeds are packed with many nutritional b and health benefits. Quinoa is a rich source of protein, it is one of the main plant based protein resource. It is also contains antioxidants, fibers and iron in good quantity.
This Quinoa salad is prepared along with hung curd and veggies and it is health and satisfying salad that one can consume as a mini meal.

Preparation time: 15 minutes
Cooking time: 10 minutes
Serves: 2 persons

Ingredients:
1 cup cooked quinoa
1 cup hung curd
1 finely chopped tomato
1 finely chopped cucumber
1 finely chopped onion
1 finely chopped carrot
1 tbsp finely chopped capsicum
1/4 cup finely chopped coriander
1 tbsp garlic pepper seasoning
1 tsp chilli flakes
1 tsp oregano
1 tbsp white and black sesame seeds

Method:

  1. Wash and rinse quinoa properly and soak for ten minutes. Then cook them in boiling water and drain the excess water. Chop all the veggies till the quinoa is cooked.
  2. Now in a mixing bowl, add hung curd.
  3. Add all chopped veggies and mix it well.
  4. Then add cooked quinoa, garlic pepper seasoning, oregano, chilli flakes and mix well.
  5. Lastly sprinkle sesame seeds.
  6. Serve chilled.

Note:

  1. If you don’t have garlic pepper seasoning add salt and pepper powder.
  2. You can add your choice of seeds and even roasted peanuts.
