FARFALLE PASTA SALAD

Farfalle are a type of pasta commonly known as bow-tie pasta or butterfly pasta. The name is derived from the Italian word farfalle which means butterflies. Farfalle pasta are usually served with creamy sauces in pasta salads with vegetables or with tomato sauce too.
I prepared this salad using refreshing pesto dressing, farfalle pasta and vegetables. This delightful and refreshing salad can be prepared quickly and also be consumed as a mini meal.

Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 2 persons
Ingredients:
1 cup farfalle pasta
1/4 cup finely chopped onion
1/4 cup finely chopped red bell peppers
1/4 cup finely chopped yellow bell peppers
1/4 cup finely chopped green capsicum
1/4 cup finely chopped tomatoes
1/4 cup finely chopped coriander
1 tbsp oregano
Salt to taste
For pesto dressing:
2 cup ( tightly packed) basil leaves
10 almonds ( soaked and peeled)
1 lemon
1 tsp black pepper powder
1 tbsp olive oil
Salt to taste
Method:
1. Cook pasta as per instructions and keep aside.
2. For pesto dressing, add all ingredients of the dressing in a blending jar and blend it. Add some water if needed
3. In a broad bowl add all chopped vegetables.
4. Then add oregano, pesto dressing and cooked pasta and mix well. Taste and adjust the seasoning. Keep it in refrigerator for while.
5. Served Chilled.
Notes:
1. You can add your choice of veggies.
2. Can add paneer, cheese or tofu.
3. Can add your choice of seasoning.
