SPINACH CORN SANDWICH

Spinach Corn sandwich is a great recipe for breakfast and kid’s lunch box. This toasted or grilled sandwich recipe is prepared with creamy and cheesy spinach and corn filling. Usually all purpose flour, milk, garlic and seasonings are added in this filling and can be prepared quickly. I prepared the filling without garlic and with whole wheat flour for healthier version. To save time you can prepare the filling in advance.

Cooking time: 10 minutes
Makes: 4 sandwiches
Ingredients:
1 cup boiled corn kernels
2 cup finely chopped spinach
2 tbsp wheat flour
1 cup milk
1 tbsp red chilli flakes
1 tsp oregano
1 tsp mix herbs
1/2 cup grated cheese
Salt to taste
4 tbsp butter
8 slices bread
Method:
- Heat two tbsp butter in a pan and sauté corn for a few seconds. Further add chopoed spinach, salt and cook for 2-4 minutes.
- Then add wheat flour and sauté for a while. Add milk and mix well. Stir continuously and add red chilli flakes.
- Once the mixture starts thickening add both the seasoning/herbs. Lastly add cheese, mix and turn off the heat. Our filling is ready.
- Apply butter on the bread slice. Spread the prepared filling on other bread slice. Then cover it with buttered slice.
- Heat the grill pan and grease with butter. Toast the prepared sandwich. Spread butter as required.
- Serve hot.
Note:
- Can add cheese slice before toasting sandwich.
