GREEN APPLE JALEBI

Sweets, especially traditional sweets are the heart of Indian cuisine. Jalebi is most famous Indian sweet. It is almost available all around India. This crispy and juicy sweet is favourite of all.
Generally, jalebi batter needs time to ferment but for quick recipe, I made batter using yeast and batter is ready in one hour resting time.
Giving a little twist to the traditional Jalebi, I have made Green Apple Jalebi.

Prep time: 20mins + 1 hour resting time
Cooking time: 30mins
Serves: 4
INGREDIENTS:
2 Green Apple
1 cup all purpose flour
2 tsp cornflour
1/2 tsp dry yeast
1 tbsp ghee
1 tsp sugar
Pinch of salt
Ghee for deep frying
Chopped dry fruits of your choice for garnishing
For Sugar Syrup:
1 cup sugar
1 cup water
1/4 tsp saffron
1/2 tsp lemon juice
METHOD:
1. Dissolve yeast with 1/4 tsp sugar in 1/2 cup luke warm for 5-10 minutes until it become frothy.
2. Now in an another vessel, add all purpose flour, cornflour, sugar, salt and yeast mixture. Mix well, add ghee and water to prepare batter. Donot make runny batter, add less water.

3. Cover it & let it rest for about an hour.
4. For sugar syrup, mix water sugar & saffron and boil it until it reaches one string consistency, lastly add lemon juice in it, it will prevent forming of crystals in sugar syrup.


5. Cut apple into slices, remove the seeds.

6. Heat ghee, once hot, turn flame on. Medium, dip the apple slice in batter and carefully put it in hot ghee & fry from both sides till it becomes golden & crispy.


7. Soak it in warm sugar syrup. Till another jalebi is fried, let it be dipped in sugar syrup, flip in between. Then remove it & put on wire mesh to drain excess sugar syrup.


8. Garnish with chopped dry fruit and serve.
Note:
1. If you don’t want to use yeast, skip it and let the batter rest for overnight.
2. Can use red apple, pineapple too.
