RAVIOLI

Ravioli is a pillow like stuffed pasta. This Italian delicacy takes a bit of effort & time to make but it is worth, cause it is so delicious. Ravioli can be prepared with various fillings & gravies. We can choose everything as per our choice & taste. Here I have made spinach cheese filled ravioli in pink gravy.

For Ravioli:
3/4 cup all purpose flour
2 tsp butter
Salt to taste
All purpose flour for rolling if needed
2 tsp oil

For stuffing:
1/2 cup grated cheese
1/2 cup blanched and chopped spinach
1/2 tsp oil
1 tbsp garlic( finely chopped)
1 tbsp green chillies ( finely chopped)
1/4 cup onion (finely chopped)
Salt to taste.

For pink gravy:
1 tbsp oil
1 tbsp garlic (finely chopped)
1/2 cup onions ( finely chopped)
1- 1/2 cup tomato puree
1 tsp sugar
2 tbsp ketchup
2 tbsp red chilli flakes
3/4 cup white sauce

Other ingredients:
1/2 cup grated cheese
1/2 tsp red chilli flakes

Method:

For Ravioli:

1. Knead soft dough by adding butter,salt & needed cold water.
2. Divide dough into 22 or 24 equal parts. Also divide spinach stuffing in 11 or 12 parts.
3. Roll small circles from two dough portion. Place one portion of stuffing on one circle & spread evenly , place another circle over it & press it gently all over circumference using a fork so that they stick properly.

4. Repeat step 3 & prepare rest of raviolis.

5. Boil water in broad pan, add salt & oil. Once it starts boiling put three raviolis & let it cook on medium heat for 3-5 minutes.

6. Repeat step 5 & cook rest of raviolis & keep aside.
For spinach stuffing:
1. Heat oil in non stick pan, add garlic , green chillies & sauté on medium flame for few seconds, then add onions & sauté for about one minute.
3. Then add spinach & salt, mix well & cook for more one minute. Turn off heat, add cheese & mix well. Keep aside.

For pink gravy:

1. Heat the olive oil in non stick pan ,add onion- garlic & sauté till it becomes pink on medium heat.
2. Add tomato puree, salt & cook for few more minutes on medium heat. Stir occasionally.
3. Add sugar, chilli flakes, tomato ketchup, mix well & cook for few more minutes, stir occasionally.
4. Add white sauce, mix well. Our pink gravy is ready. Keep aside.

How to set for baking:

1. Pour & spread pink gravy in baking tray.
2. Place raviolis & pour pink gravy over it.
3. Cover it with grated cheese & sprinkle red chilli flakes.
4. Bake in pre heated oven at 200℃ for 15 minutes.
5. Serve hot.

Note:
1. Can place double layer of raviolis & bake.
2. Can stuff your choice of ingredients in spite of spinach filling.
