MEXICAN SALAD

Salad is essential for any cuisine. Salads are served with various dressing & ingredients as per the menu, choice & places. Though I prefer salads without dressing & minimum spices. International cuisine salads are mostly with dressings. Few international salads are very famous & favourite amongst Indians too.

Ingredients:

1 cup boiled Red Kidney Beans (Rajma)
1 cup boiled sweet corn kernels
1 cup tomato ( diced)
1 cup tri coloured bell peppers ( diced)
3/4 cup crushed nacho chips.
For dressing:
3 tbsp olive oil
1 tbsp chilli flakes
2 tsp oregano
1 tbsp lemon juice
Salt to taste.

Method:
1. Beat olive oil & lemon juice then add rest ingredients of dressing , mix well & keep aside.
2. Mix all ingredients of salad in bowl except nacho chips.
3. Add dressing & mix well. Add nacho chips at the time of serving. Spare 2 tbsp crushed nacho chips for garnishing.
4. Garnish with nacho chips & served chilled.
Note:
1. Can add paneer cubes.
2. It is preferable to keep prepared dressing for 15 minutes then add to salad.
