ALOO SHIMLA MIRCH KI SABZI
(POTATO CAPSICUM DRY SABZI)

Aloo Shimla mirch is a Punjabi recipe which is dry and has no liquids.
In Hindi, potatoes are called as ‘Aloo’ and Capsicum are known as ‘Shimla Mirch’. Aloo shimla mirch is a quick and delicious recipe prepared with minimum spices. As this is a dry preparation it is also good option for the tiffin box. I have prepared it without using onion garlic, you can add if you wish. This savoury and tangy dish can be served as a side dish or also as a main dish.

Preparation time: 5 minutes
Cooking time: 15 minutes
Serves: 2 persons
Ingredients:
4 medium sized potatoes (cut in a slices)
2 medium sized capsicum (cut in a slices)
2 tbsp oil
1 tsp cumin seeds
1 tsp coriander cumin powder
1 tsp red chilli powder
1/2 tsp turmeric powder
1/2 tsp garam masala
1/2 tsp dry mango powder (aamchur)
Pinch of asafoetida
Salt to taste
Finely chopped coriander
Method:
- Heat oil and add cumin seeds, let them splutter, then add asafoetida and potatoes. Mix and stir.
- Cover and cook till potatoes cook halfway.
- Then add the capsicum and stir for 1-2 minutes.
- Further add all dry spices and salt. Mix it well.
- Splash some water then cover and cook on a low flame until the vegetables are cooked properly.
- Lastly add some chopped coriander and turn off the heat.
- Serve hot with phulka , salad etc.
