Preparation Time: 15 minutes
Cooking Time: 20 minutes
Total Time: 35 minutes
Servings: 4

Ingredients:

1½ cups boiled macaroni
1 tbsp olive oil or butter
1 medium onion, finely chopped
4-5 garlic cloves, finely chopped
¼ cup green peas
¼ cup baby corn, sliced
¼ cup carrot, diced
¼ cup green zucchini, diced
¼ cup yellow zucchini, diced
¼ cup capsicum, diced
1 cup tomato puree
3½-4 cups water or vegetable stock
Salt, to taste
1 tsp freshly ground black pepper
1 tsp oregano
6-8 fresh basil leaves, torn by hand

Method:

Heat olive oil or butter in a deep pan. Add chopped onion and sauté until soft and translucent. Stir in the chopped garlic and cook for another minute until aromatic.

Add green peas, baby corn, carrot, green zucchini, yellow zucchini, and capsicum. Sauté for 3-4 minutes so the vegetables remain slightly crisp.

Pour in the tomato puree followed by water or vegetable stock. Mix well.

Season with salt, Black pepper, Oregano.
Bring everything to a gentle boil.

Once the broth starts boiling, add the boiled macaroni. Stir gently and let it simmer for 4-5 minutes so the pasta absorbs the delicious flavours of the broth.

Switch off the flame and tear fresh basil leaves directly into the soup. Stir gently and serve immediately while hot.

Serving Suggestions:

Serve hot with toasted garlic bread.
Pair with a grilled cheese sandwich for a complete meal.
Sprinkle grated processed cheese just before serving if desired.
Add chilli flakes for a spicy kick.

Tips:

Vegetable stock gives a richer flavour than plain water.

Do not overcook the vegetables—they should retain a slight crunch.

Tear basil leaves instead of chopping them to preserve their aroma.

Adjust the consistency by adding more hot water if the pasta absorbs too much liquid.
Short pasta varieties like macaroni, fusilli, or small shells work best.

Variations:

Add sweet corn or mushrooms for extra texture.
Include white beans or boiled chickpeas for added protein.
Stir in a splash of fresh cream for a creamier version.
Replace macaroni with whole wheat or millet pasta for a healthier option.
