GREEN PAV BHAJI – SURAT SPECIAL

Surat’s famous Green Pav Bhaji, also known as Hariyali Pav Bhaji, is a healthy twist on the classic Pav Bhaji. Its vibrant green colour comes from a flavourful green paste made using spinach, coriander, mint leaves and green chillies. This Surti version is aromatic, herby and incredibly refreshing.

Green Pav Bhaji is loved by those who enjoy green masala, street-style flavours and Gujarati food culture. It’s perfect for winter dinners, cozy weekend meals and family gatherings. Just like Mumbai Pav Bhaji, this version is also served with buttery buns, onions, lemon wedges and lots of love.

Serves: 4 persons

Ingredients
For the green paste:

1 cup coriander

½ cup mint leaves

½ cup blanched spinach

2 green chillies

1″ piece ginger

Other Ingredients:

3 cups boiled and mashed mixed vegetables

¼ cup boiled green peas

2 finely chopped green tomatoes

2 finely chopped onions

¼ cup finely chopped capsicum

¼ cup finely chopped green garlic

¼ cup finely chopped spring onions

1 tsp ginger–garlic paste

2 tbsp finely chopped coriander

1 + 2 tbsp oil

2 tbsp butter

1 tsp cumin seeds

½ tsp turmeric powder

1 tbsp red chilli powder

1 tbsp pav bhaji masala

1 lemon

Salt to taste

For serving:

Buns

Onion

Lemon

Method

Prepare the green paste and chop all the vegetables. Keep everything ready.

Heat oil and butter in a pan. Add cumin seeds and let them splutter. Add ginger–garlic paste and sauté until the raw aroma disappears.

Add onions and sauté until they turn transparent. Then add green tomatoes and cook until soft and mushy.

Add boiled green peas and mashed vegetables. Mix well and add turmeric powder, pav bhaji masala and red chilli powder. Let it cook on low flame.

In another pan, heat oil and sauté green garlic and spring onions. Add capsicum and cook for a couple of minutes.

Add the green paste and cook for 1–2 minutes.

Add this mixture to the bhaji and combine well.

Finally, add salt, lemon juice and a little butter. Mix and cook for a few more minutes. Add chopped coriander and turn off the heat.

Serve hot with buttered buns, onions and lemon wedges.
