
KESAR SABUDANA SHEERA
A fragrant and festive sweet prepared with soaked sabudana, slow-cooked in ghee and flavored with saffron. This vrat-friendly sheera is mildly sweet, rich in texture, and beautifully golden yellow—just right for Navratri’s auspicious festival. Garnished with nuts, it makes a delightful prasad as well as a comforting sweet treat during fasting days.
Its golden-yellow hue symbolizes positivity and devotion, making it ideal for Day 4 of Navratri, when yellow is the colour of the day. Soft, fragrant, and rich with nuts, this sheera doubles as prasad as well as a festive dessert.

Preparation Time: 15 minutes (excluding soaking)
Cooking Time: 20 minutes
Servings: 3–4
Ingredients:
1 cup sabudana (soaked 4–5 hours or overnight)
3 tbsp ghee
½ cup sugar or grated jaggery (as per vrat rules)
2 cups water or milk (as preferred)
6–7 strands saffron, soaked in 2 tbsp warm milk
½ tsp cardamom powder
1 tbsp almonds flakes
1 tbsp pistachio flakes
Method:
Heat ghee in a pan, add soaked sabudana and sauté for 3–4 minutes till they turn translucent.
Once the sabudana is cooked and soft, add cardamom powder, almond flakes and pistachio flakes. Stir until the sheera thickens and becomes glossy. Then turn off the flame.
Add water/milk , soaked saffron , sweetner of your choice and cook on medium flame, stirring continuously so pearls don’t stick.
Serve warm as prasad during Navratri puja or enjoy as a light vrat dessert.
