MANGO BOBA TEA

Ingredients:
For Mango Boba Pearls:
1/2 cup mango puree
1 cup tapioca starch
1 tsp powdered sugar (optional)
1 cup sugar syrup
For Mango Milk:
1/4 cup mango puree
150 ml milk
1 tsp sugar
Method:
In a large bowl, mix half the tapioca starch with mango puree and powdered sugar. Stir well, then microwave the mixture for 30 seconds.
Gradually add more tapioca starch as needed to form a smooth, non-sticky dough.
Roll the dough into thin cylindrical shapes, cut into small pieces, and roll them into smooth balls.
Boil 4 cups of water in a broad vessel. Add the mango boba pearls and cook for 4-5 minutes, or until they begin to float.
Remove from heat, drain, and refresh the pearls in cold water immediately.
Place the mango boba pearls in sugar syrup to prevent them from sticking together.
To make the mango milk, blend the mango puree, sugar, and milk together.
Add 1/2 cup of boba pearls to a glass, top with ice, and pour in the mango milk.
Serve chilled.
