Zucchini Rolls

Zucchini rolls are a creative and delicious dish made with thinly sliced zucchini, flavorful fillings, and aromatic seasonings. The zucchini is typically sliced into thin layers, filled with a savory mixture, and rolled up. Fillings can vary widely, but popular choices include cheese, paneer, herbs, and spices. In this recipe, I’ve stuffed the zucchini with a flavorful paneer and bell pepper filling, then served the rolls with a spicy and tangy arrabbiata sauce.

Ingredients
For the zucchini:
1 green zucchini
Oil for grilling
For the stuffing:
1 tbsp oil
1 finely chopped onion
4 finely chopped garlic cloves
1 tbsp finely chopped green capsicum
1 tbsp finely chopped yellow bell pepper
1 tbsp finely chopped red bell pepper
1/2 cup grated paneer (cottage cheese)
1 tbsp red chili flakes
1 tbsp oregano
1 tbsp mixed herbs
Salt to taste
For serving:
1/2 cup arrabbiata sauce
2 tbsp grated cheese
Method:
- Thinly slice the zucchini lengthwise. Grill the slices on both sides using a little oil until slightly tender.
- To prepare the stuffing, heat oil in a pan and sauté the onion and garlic until fragrant.
- Add the three types of bell peppers and cook for a couple of minutes.
- Stir in the paneer, salt, and seasonings. Mix well and cook for 1 minute. Turn off the heat.
- Take a spoonful of the stuffing, shape it into an oblong form, and place it at one end of a zucchini slice. Roll the slice carefully. Repeat with the remaining slices and stuffing.
- In a microwave-safe plate, spread a layer of arrabbiata sauce. Place the prepared zucchini rolls on top and sprinkle with grated cheese. Microwave for 30 to 50 seconds, or until the cheese melts.
- And voilà ! Your healthy and delicious zucchini rolls are ready to serve.
