DAHI TIKHARI

Dahi Tikhari is a delicacy of Saurashtra region of Gujarat. It is one of the dishes served at Dhabas- road side hotels. It is also known as “Kacchi Kadhi” . The main thing about Saurastra’s food is that apart from being tasty it is spicy and full of oil.
This is served as a side dish or consumed with any flat bread too. For this we need thick curd. If curd is not thick then first hang it for few minutes so excess water is drained out and it becomes thick.

Preparation time: 5 minutes
Cooking time: 10 minutes
Serves: 2 persons
Ingredients:
2 cup thick curd
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 sprig curry leaves
6 cloves garlic
1 tbsp kashmiri red chilli powder
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp roasted cumin powder
Pinch of asafoetida
Salt to taste
Coriander for garnish
Method:
- Grind garlic and red chilli powder in mortar and pestle.
- Heat the oil in one pan, add mustard seeds, cumin seeds and curry leaves. Let them splutter,once splutter add asafoetida , garlic chilli paste and saute it well.
- Then add salt, turmeric powder, coriander powder , cumin powder and saute for few seconds. Then turn off the heat.
- Now it’s time to add thick curd. Add curd and roughly mix it. Do not stir more and try to mix it in one direction. Garnish with coriander.
- Serve it with bhakhri, paratha or any indian flat bread.
