BHAPA DOI

Bhapa Doi is a traditional sweet from West Bengal. We can call it Indian avatar of cheese cake. This delectable sweet is prepared from hung curd and condensed milk along with cardamom, saffron etc. ‘Bhapa’ means ‘steamed’ and ‘Doi’ means dahi/curd. This traditional and authentic Bengali sweet is usually served after meals. I prepared Bhapa Doi to celebrate Bengali New Year,Poila Baishakh.

Preparation time: 10 minutes
Steaming time: 25 minutes
Chilling time: 4 hours
Serves: 4 persons
Ingredients:
4 cups hung curd
2 cup condensed milk
1 tsp cardamom powder
1/8 tsp saffron (soaked in 1 tbsp warm milk)
Method:
- Transfer hung curd in a big mixing bowl, add condensed milk and mix well with a whisk until smooth.
- Further add cardamom powder & soaked saffron and mix.
- Add water in the steamer and turn on the heat. Transfer the prepared mixture in a greased mould. Line it with baking paper for easy unmould. Pour the prepared mixture in it and cover it with a foil.
- Place it in steamer and let it cook for about 20-25 minutes. You can check after 20 minutes by pricking toothpick for doneness.
- Once it’s done, remove from the steamer and let it come to room temperature, then place it in a refrigerator for 3-4 hours.
- Then unmould it . Place it in a serving plate.
- Enjoy and relish.
