Horse gram, also known as Kollu in Tamil, Ulavalu in Telugu, Kulthi in Hindi, Hurule in Kannada, Gahat in Nepali, Hulga in Marathi, Kolatha in Odia, and Kuleeth in Gujarati, is a nutrient-rich legume commonly used in Indian cuisine. It’s an excellent source of plant-based protein, dietary fiber, iron, calcium, and potassium. With a low glycemic index, horse gram is suitable for individuals with diabetes. Serves: 1 person
Ingredients:
- 1/4 cup kollu (horse gram)
- 1 tbsp oil
- 1 tbsp grated fresh coconut
- 1 sprig curry leaves
- 1 chopped green chili
- 1 tsp mustard seeds
- 1 tsp udad dal
- 1 tsp turmeric powder
- Pinch of asafoetida
- Salt to taste
Method:
- Soak kollu overnight and pressure cook it.
- Heat oil, add mustard seeds and udad dal, and let them splutter.
- Add onion, green chilies, and curry leaves along with asafoetida. Sauté until the onions turn translucent.
- Add pressure-cooked horse gram, salt, and turmeric powder. Mix and cook for a while.
- Finally, add grated coconut, mix, and cook for a couple of seconds. Turn off the heat.
- Our delicious and healthy Kollu Sundal is ready to serve. Serve hot.
