RAGI APPLE BROWNIE

Brownie is a classic, rich, and decadent dessert that’s dense and usually square-cut, prepared using flour, chocolate, and sugar. It can be prepared eggless or with eggs. Brownies are often fudgy, gooey, and chocolaty with a crispy crust on top. However, I’ve prepared a healthier version using ragi flour, apple, and jaggery.

Preparation Time: 5 minutes
Baking Time: 6-7 minutes (microwave) / varies by oven
Serves: 4 persons

Ingredients:
To blend together:
1 apple, diced (seeds removed)
1/2 cup jaggery powder
1/2 cup curd
3 tablespoons ghee
Other ingredients:
1.5 cups ragi flour
2 tablespoons cocoa powder
1 tablespoon chopped walnuts
1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons melted chocolate
For garnish/topping:
Few pieces of walnuts
Few pieces of chocolate

Method:

  1. Blend the apple, jaggery powder, curd, and ghee into a smooth texture.
  2. Transfer the mixture to a mixing bowl.
  3. Sieve the ragi flour, cocoa powder, baking powder, and baking soda into the bowl.
  4. Mix well. Add chopped walnuts and melted chocolate, and mix again.
  5. Transfer the batter to a microwave-safe mold. Top with chocolate and walnut pieces.
  6. Microwave for 6-7 minutes. Baking time may vary by oven.
  7. Unmold once slightly warm and enjoy.
