RAGI APPLE BROWNIE

Brownie is a classic, rich, and decadent dessert that’s dense and usually square-cut, prepared using flour, chocolate, and sugar. It can be prepared eggless or with eggs. Brownies are often fudgy, gooey, and chocolaty with a crispy crust on top. However, I’ve prepared a healthier version using ragi flour, apple, and jaggery.

Preparation Time: 5 minutes
Baking Time: 6-7 minutes (microwave) / varies by oven
Serves: 4 persons
Ingredients:
To blend together:
1 apple, diced (seeds removed)
1/2 cup jaggery powder
1/2 cup curd
3 tablespoons ghee
Other ingredients:
1.5 cups ragi flour
2 tablespoons cocoa powder
1 tablespoon chopped walnuts
1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons melted chocolate
For garnish/topping:
Few pieces of walnuts
Few pieces of chocolate
Method:
- Blend the apple, jaggery powder, curd, and ghee into a smooth texture.
- Transfer the mixture to a mixing bowl.
- Sieve the ragi flour, cocoa powder, baking powder, and baking soda into the bowl.
- Mix well. Add chopped walnuts and melted chocolate, and mix again.
- Transfer the batter to a microwave-safe mold. Top with chocolate and walnut pieces.
- Microwave for 6-7 minutes. Baking time may vary by oven.
- Unmold once slightly warm and enjoy.
