RANGINAK

Ranginak is a traditional Persian dessert made with dates, nuts, and spices. Originating from the southern province of Bushehr, this dessert’s name “Ranginak” literally means “colorful” in Persian, referring to its vibrant appearance.

Ranginak is often served at special occasions like weddings, holidays, and family gatherings. It’s also a popular dessert during the Persian New Year (Nowruz) celebrations.

While traditional recipes use Medjool dates and walnuts, this version uses regular dates and almonds instead. You can either chop the dates and nuts together or stuff whole dates with nuts. Adding a flour layer makes this dessert healthier, but feel free to skip it.

Serves: 4 persons

Ingredients:

For the Base Layer:

– 12 dates (pitted)

– 12 almonds (dry roasted)

For the Middle Layer:

– 1/2 cup wheat flour

– 1/2 cup ghee

– 1/2 cup jaggery powder

For the Top Layer:

– 1/4 cup pistachio powder (coarse)

– Few dry rose petals

Method:

1. Remove seeds from dates and place one almond in each date. Place stuffed dates in a mold.

2. Heat ghee and sauté flour until it turns pink and aromatic.

3. Add jaggery powder and turn off the heat. Mix well until jaggery is fully incorporated.

4. Layer this mixture over the dates layer. Press well to create a smooth layer.

5. Cover this layer with pistachio powder. Lightly press it.

6. Refrigerate for 30 minutes to set.

7. Garnish with dry rose petals and enjoy this healthy dessert.

Notes:

1. You can replace wheat flour with gram flour.

2. Feel free to add nuts and spices of your choice.
