CHIPOTLE POTATO SKEWERS

Chipotle seasoning is a spicy and smoky blend that adds depth to many dishes. Typically, this seasoning includes chipotle peppers, garlic, onion, cumin, and other spices. Chipotle peppers are smoked jalapeños with a rich, slightly sweet heat, and are a staple in Mexican and Southwestern American cuisine.
Here, I’ve marinated parboiled potatoes in Chipotle seasoning and grilled them. These deliciously spicy potato bites make a perfect starter for any party.

Preparation Time: 10 minutes
Marination Time: 30 minutes
Grill Time: 15 minutes
Serves: 4 persons

Ingredients:

– 12 baby potatoes (parboiled)

– 1 capsicum (diced)

– 1/4 cup Chipotle seasoning

– 2 tablespoons oil

– 2 tablespoons curd

– Oil for grilling

Method:

1. In a mixing bowl, combine Chipotle seasoning, oil, and curd. Mix well.

2. Add parboiled potatoes (prick with a toothpick) and capsicum. Mix to coat everything well. Cover and refrigerate for 30 minutes.

3. Remove from the refrigerator and thread marinated potatoes and capsicum onto wooden skewers.

4. Heat a grill pan with oil, place the skewers, and grill from all sides.

5. Serve hot with green chutney and onion rings
