CRANBERRY SANDWICH DHOKLA

Dhokla is a popular steamed and savory snack from Gujarati cuisine. Though it originated in Gujarat, dhokla has gained fame amongst non-Gujarati communities across India and some parts of the world. When we hear the name Dhokla, we can visualize a soft, spongy, and delicious delicacy. Today, I have prepared Cranberry Sandwich Dhokla.

Serves: 2 persons
Ingredients:
For Dhokla:
- 1 cup idli batter
- 1 tsp black pepper powder
- Few chopped dried cranberries
- Salt to taste
For Cranberry Sauce:
- 1/4 cup dried cranberries
- 1/4 cup chopped beetroot
- 1 tsp red chilli powder
- 1 tsp coriander-cumin powder
- 1 tsp black salt
For Tempering:
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp sesame seeds
- 1 sprig curry leaves
For Garnishing:
- 1 tsp finely chopped coriander
Method:
- For the cranberry sauce, soak cranberries in hot water for half an hour.
- Then blend it with beetroot into a smooth puree.
- Transfer this puree into a pan, add all the seasonings, and cook until it thickens.
- Now prepare the steamer and turn on the heat. Grease the mold or plate with oil and add idli batter. Sprinkle black pepper powder and chopped cranberries.
- Place the mold into the steamer, cover, and cook for 15-20 minutes.
- Once cooked, remove from the steamer and let it cool slightly. Then cut from the center. Apply cranberry sauce to the bottom layer, then place the top layer over it.
- Prepare the tempering using the tempering ingredients and pour it over the dhokla.
- Cut into desired size and shape and enjoy!
