NUTELLA MALAI CHOP

West Bengal cuisine offered a rich variety of delicacies of both vegetarian and non vegetarian category. Some Bengali sweets have spread their fame across India like Rosgulla, Sondesh, Misti doi, Rasmalai, Payesh,Cham cham, Kaccha gola, Kheer kadam. Many of Bengali sweets are prepared with Chenna. (Cottage cheese)
Malai chop also known as cream chop is authentic and traditional Bengali sweet prepared from Chenna
This luscious sweet is stuffed with mawa/khoya stuffing with cream layer to make it more rich. Here I have prepared Malai chop with little twist. I have added Nutella and walnuts in stuffing along with khoya.

Preparation time: 30 minutes
Cooking time: 40 minutes
Makes: 10 pieces
Ingredients:
1 liter cow milk
2 tbsp lemon juice/vinegar
1 tsp all purpose flour
1 cup khoya/mawa
1/2 cup nutella
1/4 cup finely chopped walnuts
For sugar syrup:
2 cup sugar
5 cup water
Method:
- In a thick bottom pan , add milk and let it boil, after one boil, turn off the heat. Add lemon juice gradually and keep stirring till it completely curdles and green whey is separated from chenna/paneer.
- Now place strainer over a large vessel, place muslin cloth over strainer and strain the curdled milk mixture in it. Carefully take the muslin cloth with chenna and squeeze it. Rinse under running tap water and squeeze it again. Keep itnin the strainer and put weight over it to drain out all excess whey.
- For this sweet we need chenna neither so moist nor so dry, so take care about this point.
- Transfer chenna in a large plate, add all purpose flour and knead it smooth. Knead till it becomes smooth, soft and lumpfree not more otherwise it will leave fat/oil.
- Take small amount of chenna mixture and prepare flat, crackfree squares or rounds as you wish.
- For sugar syrup, add sugar and water in large and broad pan and turn on the flame, keep stirring occasionally till sugar melts completely and starts rolling boiling.
- Once the sugar syrup starts boiling, carefully slide prepared chops. Make sure that they are not over crowded and have room to expand, as once they cooked, it turns double in size. Cover the vessel and let it cook for 5-8 minutes.
- Then open the lid carefully flip the chops, again cover and let them cook for 15 minutes without opening the lid. After 15 minutes, check if they are cooked, if not, cook for more some time and then turn off the heat.
- Let it sit covered till it cools down. In the mean time, prepare stuffing. For stuffing, grate khoya , add nutella and walnuts, mix properly. As nutella is sweet enough, we are not adding sugar.
- Once chops are cool down, transfer them on a mesh or plate with holes, so excess sugar syrup drains out.
- Cut them from centre, spread prepared nutells stuffing and cover it with other piece.
- Keep in the refrigerator to chill. Serve chilled.
