SHAKKARKANDI VADA

Usually we all prepare and consume Batata vada/bataka vada. A delicious snack prepared from boiled and spiced potato and gram flour batter. But I have prepared vada using sweet potatoes along with potatoes and dipped them in batter prepared from fasting flour and make it fasting snack.

Cooking time: 15 minutes
Serves: 4 persons
Ingredients:
2 sweet potatoes
2 potatoes
1/4 cup finely chopped coriander
1 tbsp chilli ginger paste
1 tbsp chopped cashew nuts
1 tbsp kismis
1 tbsp lemon juice
Rock salt to taste
For batter:
1/2 cup water chestnut flour
1/2 cup buckwheat flour
Rock salt to taste
1 tsp oil
Oil for frying
Method:
1. Boil sweet potato and potatoes. Chop coriander. Now mix both grated potatoes, coriander, chilli ginger paste, rock salt and lemon juice. Then add cashew nuts and kismis and mix well. Prepare small balls out of this mixture.
2. Now take both flour in one mixing bowl. Add rock salt and prepare lumpfree batter by adding water. Add one tsp hot oil at the time of making vada and whip it well.
3. Heat oil, dip prepared ball in batter and fry in hot oil on medium flame from all sides. Remove them on a plate.
4. Serve hot.
