LEMON MUG CAKE

Mug cakes is a quick and easy version for baking small portion or single serve cakes. You can prepare the cake in a jiffy. You can bake it in a microwave proof mug, jar or remekin. Lemon cake is the beat option for those who love lemon desserts. You can top this mug cake with lemon glaze, lemon frosting, lemon curd or cream cheese or enjoy warm as it is like I do. Sweet and tangy lemon cake takes a couple of minutes to make. I have used millet flour (sorghum flour)to make this cake gluten free and healthy.

Preparation time: 2 minutes
Baking time: 1 minutes
Serves: 1 persons
Ingredients:
4 tbsp sorghum flour
2 tbsp sugar
1/2 tsp baking powder
1-1/2 tbsp melted butter /flavour less oil
2 tbsp milk
1 tsp lemon zest
1 tbsp lemon juice
Method:
- Mix flour, sugar and baking powder in a mixing bowl.
- Add lemon zest.
- Mix butter, milk and lemon juice in a small bowl and add into dry ingredients.
- Mix well.
- Pour this batter into greased mug, jar or remekin.
- Microwave it on high for one minute and check. If needed, than microwave it for 15 more seconds.
- Serve warm with any topping or without topping as you wish.
