CHOCO ZUCCHINI CAKE

A cake is a sweet food made by baking a mixture of flour, sugar, butter/oil and eggs in an oven. There are many variations in making a cake. Eggless, flourless, without oven and many more. I have prepared chocolate flavour cake with zucchini and wheat flour.

Preparation time: 10 minutes
Baking time: 40 minutes
Serves: 4 persons

Ingredients:
1 cup grated zucchini
1-1/2 cup wheat flour
1-1/2 cup jaggery powder
1/4 cup oil (flavourless)
1/3 cup milk
1 tsp vanilla essence 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tbsp flax seed powder
1/4 cup chocolate chips
2 tbsp chopped walnuts

Method:

  1. In a mixing bowl add oil, vanilla essence, flax seed powder and milk and mix well.
  2. Then add zucchini into the bowl. (Spread zucchini in the papper towel before adding so excess water gets soaked )
  3. Then strain flour, baking powder, baking soda and salt in this mixture and fold it lightly.
  4. Add walnuts and chocolate chips and mix lightly.
  5. Preheat oven. Transfer this mixture into a greased and lined baking tin. Bake it for approximately 30 minutes on 180℃ in preheated oven.
  6. Once bake let it cool than remove from baking tin. Our moist and delicious Chocolate Zucchini cake is ready.
