MYSORE MASALA DOSA

Dosa is the dish that define South India like no other dish. It is a crispy ,thin, savoury crepe like dish prepared from rice lentil fermented batter. Dosas are served with potato filling is knowm as Masala dosa. Mysore masala dosa is one of the most popular dosa. Though both masala dosa seems same but the main difference between this two dosa is the red chutney which is spicy.

Ingredients:
For red chutney:
4-5 whole dry red chillies
1 tbsp tamarind
1 finely chopped onion
6 finely chopped garlic cloves
1 sprig curry leaves
1 tbsp split bengal grams (chana dal)
1 tsp oil
Salt to taste
For aloo masala:
4-5 boiled potato (peeled & roughly mashed)
1 finely chopped onion
1 sprig curry leaves
2 green chillis (slits)
1 tsp split bengal grams (chana dal)
1 tsp split black grams (udad dal)
1 tsp mustard seeds
1 tsp turmeric powder
2 tbsp oil
Salt to taste
For Dosa:
4 cups dosa batter
1/4 cup butter/oil

Method:

  1. For red chutney : soak red chillies in warm water for 30 minutes. Remove seeds and stems of chillies before soaking. Remove seeds of tamarind and soak in water.
  2. Heat the oil, add split bengal gram and sauté few seconds. Then add curry leaves, garlic, onion and sauté for while. Turn off the heat and let it be cool.
  3. Now take the chutney jar, add sautéed onion garlic mixture, soaked red chillies, squeezed tamarind pulp and grind it well. Add salt and grind again. Our red chutney is ready.
  4. For Aloo masala: heat oil and add mustard seeds and both dals and let them splutter and sauté for few seconds. Then add onion , green chilies and currry leaves and sauté for 1-2 minutes.
  5. Then add turmeric powder, potato and salt. Mix well and cook for 1-2 minutes. Oue aloo masala is ready.
  6. For masala dosa: heat skillet properly. Grease with oil, sprinkle some water and wipe it with cloth. Now take a laddleful of batter, and spread it in a circular direction, add a few drops of oil on slides.
  7. Spread prepared chutney.
  8. Spread prepared aloo masala in half dosa and then fold it.
  9. Serve hot.
