When we hear word Dhokla ,we can visualize a delicious ,spongy famous Gujarati snack. This popular Gujarati snack has spread it’s popularity world wide. Along with thepla and khakhra, dhokla is also the brand ambassador of Gujaratis.
Basically, dhokla is prepared from feemented batter of rice and lentils. There are many variants in Dhokla. Apart from this basic dhokla, dhoklas are prepared from gram flour, semolina and any other ingredients. Gram flour and semolina dhokla not need do fermentation of batter. They can be prepared fast and instant.
Here I have prepared dhokla from scratch by soaking rice and lentils and then grind. We can also prepare dhokla by Dhokla flour which is available in market or we can grind rice and lentils and prepare flour at home too.
This popular Gujarati snack is also known as ‘Khata Dhokla’ and ‘live dhokla’ too. ‘khata’ means sour, this dhokla is sour in taste so also called as ‘ Khata dhokla’. From last few years Dhokla has become street food. Dhokla is prepared live in a large steamer cum dhokla maker on road side or even in many occasions and hence known as ‘Live dhokla’.
Rice and dal( lentils ) ratio also differs as per choice and place.

Ingredients:
3 cup rice
1 cup mix lentils (chana dal, udad dal, moong dal, toor dal,)
1/4 cup soaked chana dal
1/2 cup curd(sour)
3 tbsp ginger chilli paste
1 tsp turmeric powder
1/4 tsp asafoetida
1 tbsp baking soda
3 tbsp oil
1 tbsp red chilli powder
Coriander for garnish
For serving:
Coriander chutney
Garlic chutney
Groundnut oil
Method:
1. Soak the rice and dal for 7-8 hours or overnight.
2. Then grind separately into paste using curd. Mix both the pastes,cover and keep it in the warm place for 7-8 hours for fermentation.
3. After fermentation, add salt, turmeric, asafoetida, ginger chilli paste and mix well. Add few spoons of water if the batter is thick.
4. Add water in a steamer and let it boil. Grease thali/plate with oil.
5. Add soaked bengal grams in batter and mix. Lastly add baking soda and oil, mix and whisk and pour batter in the greased plate.
6. Sprinkle red chilli powder in the plate and keep it in the steamer and cook for 12-15 minutes. Timescmay vary as per the quantity of batter you add in a plate. You can check it by inserting knife for doneness.
7. Remove it from the steamer, after a while make cuts with knife and remove from the plate. Continue same process with rest of the batter.
8. Garnish with coriander and serve hot with ground nut oil and chutneys.
