NO ONION NO GARLIC GRAVY (JAIN GRAVY )

Jain vegetarinism is practiced by the followers of the Jain culture and philosophy. It is one of the most rigorous form of spirituality motivated diet on the Indian sub continents and beyond.
The Jain cuisine vis completely vegetarian and excludes root and underground vegetables such as potato, onion, garlic and many more to prevent injuring small insects and micro organisms. The diet also helps to prevent entire plant from being uprooted and killed.
Though several other caste and religion like vaishnav, brahmin and swaminarayan excludes onion and garlic in their diets.
This No onion No garlic gravy can be used in many various dishes and vegetable preparation.

Serves: 4-5 persons
Ingredients:
8-10 tomatoes
1/4 cup cashew nuts (preferably soaked)
1/4 cup melon seeds (preferably soaked)
1/8 cup poppy seeds (preferably soaked)
4 bay leaves
4 small pieces cinnamon
6 cloves
12 pepper corns
1 tsp turmeric powder
1 tbsp red chilli powder
2 tbsp kasuri methi
1/8 tsp asafoetida
Salt to taste
Method:
- Roughly chop tomatoes. Add cashew nuts, melon seeds and poppy seeds in it. Add water as needed.
- Let them cook covered for 15-20 minutes or until tomato becomes mushy. Then turn off the heat.
- Once it becomes cool, grind it into fine paste and pass through a strainer for a smooth paste.
- Heat oil in thick bottom pan. Add all whole spices and sauté on a low flame for couple of seconds to turn them aromatic.
- Further add asafoetida , turmeric and red chilli powder and sauté few seconds.
- Now add tomato paste, salt ,mix and cook gravy for 5-7 minutes on a low flame.
- Then lastly add kasuri methi, mix and cook for two minutes then turn off the heat.
- Our no onion no garlic gravy is ready to use.
