ZUCCHINI QUINOA KEBABS

Zucchini is a squash family vegetable which was originated in Northern Italy. It can be dark green or yellow. In a simple way, we know it as the foreign cucumber 😄. Zucchini improves digestion, slows down aging, lowers blood sugar levels and boosts energy levels. Quinoa is a pseudocereal grain and because of it’s enormous amount of nutrients and health benefits it is considered as a super food. Quinoa is one of the main plant based protein source.
Today, I have prepared kebabs using these two healthy ingredients as the key ingredients. I have shallow fried them to make it more healthy. So let’s check the recipe and enjoy this guilt free healthy snack.

Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 2 persons

Ingredients:

1/2 cup cooked quinoa
1/2 cup grated zucchini
1/2 cup boiled and grated potato
1/4 cup finely chopped coriander
1 tsp green chilli paste
1/4 cup oats
1/4 cup gram flour
1/4 cup bread crumbs
1 tsp garam masala
1 tsp dry mango powder
Salt to taste
Oil for shallow frying

Method:

  1. In a mixing bowl take cooked quinoa ,grated zucchini, potato, coriander, green chilli paste and mix well. Make sure that the coriander is dry and light press grated zucchini to discard excess water.
  2. Further add salt, spices, oats, gram flour and bread crumbs. Mix it with light hand to form a dough like mass.
  3. Prepare kebabs out of this mixture.
  4. Heat little oil in frying pan and shallow fry these kebabs from both sides on a low flame, till they turn crispy.
  5. Relish these healthy and delicious kebabs with tea,coffee, ketchup, chutney and rain🌧️.
