RAGDA PATTICE

Ragda Pattice or Patties is a popular street food from Gujarat and Maharastra. It is very much similar to Chole tikki – popular street food from North India. Ragda pattice is amongst the popular Chaat. Though it is a street food , but because of it’s popularity many fast food joints and restaurants serve it. Like all Chaat dishes, various chutneys play important role to make this dish lip smacking.
Patties prepared from potatoes and ragda prepared from white dried peas. Both of these assembled with various chutneys and top up with besan sev. Sometimes it is served with buns too. This satiating snack turns into a meal too.

Serves : 4 persons
Ingredients:
For Ragda:
2 cup white dried peas
1 tbsp green chilli paste
1 sprig curry leaves
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chilli powder
1 tsp garam masala
1 tbsp jaggery
1 tbsp lemon juice
1 tbsp oil
Pinch of asafoetida
Salt to taste
For patties:
12 potatoes
2 tbsp green chilli paste
Salt to taste
Oil for shallow frying
For serving:
3 tbsp finely chopped onions
3 tbsp finely chopped coriander
2 cup besan sev
1/4 cup Garlic chutney (diluted)
1/4 cup Coriander chutney
1 cup Dates tamrind chutney
Method:
- Wash and soak peas for 8-10 hours or overnight. Then pressure cook them.
- Pressure cook potatoes. Once they cool down, peel them and mash. Add green chilli paste, salt and mix.
- Grease your palm and prepare patties and shallow fry them using oil.
- Heat oil in a deep vessel and add mustard and cumin seeds along with curry leaves and let them splutter. Further add green chilli paste and sauté couple of seconds.
- Now add asafoetida , turmeric powder and mix. Add boiled peas, red chilli powder, garam masala, jaggery and salt.
- Add about three cups of water and let it boil, after one boil, turn the flame on low and let it simmer for 5-7 minutes. Lastly add lemon juice, mix and turn off the heat.
- Now serve ragda and patiies along with onions, coriander, chutneys and sev.
Note: - You can deep fry patties.
