DAHI PHULKI

Dahi Phulki is a popular snack across Uttar Pradesh, Delhi and some part of Pakistan. This simple yet flavourful dish is originated in Awadhi cuisine. Similar to Dahi vada/ dahi bhalla but unique in taste. This snack is very famous in Lucknow. Dahi phulki is also one of the Iftari dish during Ramadan. Dahi means curd and phulki means light and airy pakodi/fritters.

Preparation time: 5 minutes
Cooking time: 10 minutes
Serves: 2 persons

Ingredients:
For phulki:
1/2 cup gram flour
1/2 tsp red chilli powder
1/2 tsp garloc chutney
Pinch of asafoetida
Salt to taste
Oil for frying
For Dahi:
2 cup curd
1 tsp red chilli powder
1 tsp roasted cumin powder
1 tsp garlic chutney
1/4 tsp turmeric powder
Salt to taste
For tempering:
1 tbsp oil
1 tsp cumnin seeds

Method:

  1. Prepare phulki batter with the phulki ingredients by adding water.
  2. To prepared dahi first whip curd and then add all spices, salt and garlic chutney. Mix well, cover and keep in the refrigerator.
  3. Now heat oil and drop small phulkis/fritters from prepared batter and fry it.
  4. Soak fried phulki in water for few minutes. Then remove from water , press between two palms lightly to discard the water
  5. Then add these phulkis in prepared curd
  6. Heat oil for temper & and cumin seeds. Omce they splutter pour this temper to dahi phulki.
  7. Sprinkle some red chilli powder powder , roasted cumin powder and serve chilled

Note’
1.tou can add garlc in tempering.

  1. Tou can add garlic paste instead of garlic chutney
