ORANGE BARFI CUSTARD SHOTS

Sweet/desserts are important in any cuisine. In India apart from the traditional sweets, international desserts are equally popular. Custard pudding is popular dessert which is originated in the Europe and introduced to Japan in the early Meiji period by the British. In Japan it is known as ‘Purin’ (Japanese Custard Pudding) which comes from the word ‘Pudding’.
In present day custard pudding is popular world wide, with variations nof some ingredients and process, as per own choice.
Today, I have prepared custard shots with Indian sweet Orange Barfi for Holi festival which is served chilled. These chilled shots are not only convenient to serve but delicious and refreshing.

Preparation time: 5 minutes
Cooking time: 5-7 minutes
Chilling time: as required
Serves: 4 shots

Ingredients:
3 glass milk
2-3 tbsp custard powder
2 tbsp sugar
3 pieces orange barfi
Some orange segments
Method:

1. Dilute custard powder in 1/2 cuo milk and keep aside. Now add sugar in rest of the milk and let it boil.

2. Once it starts boiling turn the flame on low and slowly add diluted custard in milk , while stirring continuously.

3. Cook on a slow flame for 2-3 minutes or until it turns thick. Stir continuously to avoid lumps and sticking on the bottom.

4. Once it thickens, turn off the heat and let it cool. While custard cools, crumble orange barfis. Keep orange segments ready.

5. Mix half of crumbled barfi in cooled custard. Now arrange and layer this custard in shot glasses. Add spoonful of custard, then add crumbled barfi then again custard.

6. Now keep this shot glasses in refrigerator for at least 2-3 hours.

7. Top up with fresh orange segments and some mint leaves and serve chilled
