GULAB JAMUN COOKIES


Gulab Jamun is the most popular and loved Indian sweet. Usually Gulab Jamun is prepared from Khoya. Khoya dumplings are deep fried and then soaked in sugar syrup flavoured with rose water, cardamom etc. They are also prepared from milk powder which is a quick and easier version. In this fast era of Instant mix, Gulab Jamun pre mixes are easily available in the market. Today, I have prepared cookies using such premix of Gulab Jamun and it has turned out so good. Crispy on the outside and soft on the inside and infused with aromatic flavours of Gulab Jamun.

Preparation time: 15 minutes
Baking time: 15 minutes
Makes: 15-20 cookies

Ingredients:
1 cup Gulab Jamun premix
1 cup all purpose flour
1/4 cup ghee
2/3 cup sugar (preferably coarse powdered)
1/4 tsp cardamom powder
3 tbsp milk (approximately)
1/8 tsp saffron
1 tsp pistachio flakes

Method:

  1. Soak saffron in warm milk. Preheat oven for 5 minutes. Prepare cookie tray, line them with parchment paper or baking paper.
  2. In a mixing bowl, mix sugar and ghee. Whip well for 2-3 minutes.
  3. Further add both , flour and gulab jamun premix, cardamom powder and saffron milk in it.
  4. Combine well using your hand. If dough is crumbly add 1 or 2 tbsp of milk as needed.
  5. Pinch the small ball from it ,roll and flatten with your plams and place them in prepared cookie trays.
  6. Add some pistachio flakes on top and press.
  7. Bake it in a preheated oven for 15 minutes at 350 ℃. Baking time may vary from oven to oven.
  8. Once baked, remove from oven, after 5 minutes, transfer cookies on a wire rack. Once cooled down completely, store them in an air tight jar.
